Apprentice chefs at The Swan at Lavenham Hotel and Spa Runners-up in National HIT MasterChef competition

Two apprentice chefs from the 15th century Swan at Lavenham Hotel and Spa were runners-up in the national final of the 2018 HIT (Hospitality Industry Training) MasterChef competition. Hannah Scott and Samuel Austin battled it out against other apprentices from across the country at the grand final, which was held at Central Street Cookery School, St Luke’s in London. – News from The Swan at Lavenham Hotel & Spa

To qualify as finalists, both apprentices were asked to create a signature dish that is representative of their local area, menu and place of work. They were then asked to prepare their dishes at the final in front of the judges as well as take on the Mystery Box Challenge to produce dishes from previously unseen ingredients.

The panel of judges included chefs, industry professionals and the Managing Director of HIT Training, Jill Whittaker; they were looking for dishes that showcased locality and seasonality as well as balance in composition and flavour.

Very proud of the young apprentices, Deborah Tullett, Group Training Manager at the TA Hotel Collection said; “It was a challenging day for Hannah and Samuel and we congratulate them on their fantastic achievement. As runners-up in a national competition, it was a great experience for them and Hannah, at just 16 years of age, is already talking about what dish she is going to make at next year’s competition.”

Hannah Scott is an Apprentice Chef on the level 2 Commis Chef Apprenticeship and Samuel Austin, is a Commis Chef on the Level 3 Chef de Partie Apprenticeship.
